Ingredients

  • 1 large bunch of tarragon, leaves chopped and stems set aside
  • 2 large onions, cut into large pieces
  • 2 large carrots, cut into large pieces
  • 3 stalks celery, roughly chopped
  • 1 head fennel, roughly chopped
  • 100 ml olive oil, plus a little more for drizzling
  • 1 garlic clove, coarsely chopped (peel and all)
  • 2 x 1½ kg free-range chicken
  • 1 lemon, quartered
  • 1 tbsp Dijon mustard, plus 1 additional tsp
  • ½ bottle of strong red wine
  • 500 ml chicken or vegetable stock

Preparation steps

  1. Preheat the oven to 180°C fan/200°C top/bottom heat/Gas 6.
  2. Place the tarragon stalks, vegetables, olive oil and garlic in a heavy roasting pan.
  3. Place the roaster over high heat and cook, stirring occasionally, for 10 minutes until the vegetables begin to brown.
  4. While the vegetables are cooking, remove any strings from the chicken.
  5. Sprinkle the chicken cavities with salt and pepper.
  6. Stuff the lemon quarters into the chicken cavities.
  7. Place the chicken breasts breast side down on top of the vegetables.
  8. Season the chicken with salt and pepper.
  9. Scatter half of the chopped tarragon leaves on top.
  10. Drizzle the chicken with a little olive oil.
  11. Roast the chickens for 20 minutes.
  12. Mix 1 tablespoon of mustard with the remaining chopped tarragon leaves.
  13. Take the roaster out of the oven.
  14. Turn the chickens over.
  15. Spread the mustard mixture over the chickens.
  16. Return the chickens to the oven and roast for another 40 minutes or until the juices run clear when you pierce a leg with a skewer.
  17. Place the chicken in a bowl or on two large plates.
  18. Cover each chicken with an inverted bowl.
  19. Skim excess fat from the roasting pan.
  20. Place the roaster on high heat.
  21. Pour in the wine and cook for 8-10 minutes until the wine is almost completely reduced.
  22. Pour in the broth and bring to the boil.
  23. Simmer the broth for 5-7 minutes until reduced by half.
  24. Stir in 1 teaspoon mustard.
  25. Season the sauce to taste.
  26. Strain the sauce into a gravy boat.
