- 1.8kg chicken
- 2 onions, cut into thick slices
- 1 lemon, halved
- Thumb-sized piece of ginger, peeled and cut into thick slices
- 400g can of coconut milk
- small bunch of coriander, roughly chopped
- 150 ml cup of natural yogurt
- 1 tbsp tomato paste
- Juice 1 lemon
- 1 teaspoon each hot chili powder, turmeric, ground coriander, ground cumin, garam masala and ground cinnamon
- Mix 6 cloves of garlic with the ginger to form a paste
- Mix ½ a finger-long piece of ginger with the garlic to form a paste
- a few drops of red food coloring (optional)
Serve with basmati rice or spicy roasted potatoes and some vegetables or an Indian-style coleslaw.
- Mix the marinade ingredients with 2 teaspoons salt and 1 teaspoon black pepper.
- Score the chicken legs a few times.
- Rub the marinade all over the chicken, including under the skin of the breast.
- Marinate the chicken in the refrigerator for up to 24 hours.
- Preheat the oven to 200°C/180°C fan/gas 6.
- Place onions, lemon halves and ginger in a roasting pan.
- Place the chicken on top of the onions, lemon and ginger in the roasting pan.

- Once the chicken is ready, remove it from the mold and place it in a new bowl.

- Scrape out the toasted seeds from the lemons and place them in a food processor.
- Add the onions and pan juices to the food processor.
- Mix the ingredients in the food processor to form a puree.
- Scrape the puree back into the roasting pan and place it on the stove.
- Stir in the coconut milk and let it bubble slightly.
- Scrape off any pieces of chicken that are stuck to the pan.
- If the sauce is too thick, add a splash of water.
- Stir in coriander.
- Serve the sauce with the roast chicken.
