  • 4 skinless chicken breast fillets
  • 1 tsp olive oil
  • 300g tagliatelle
  • 175g frozen broad beans
  • 85 g low-fat crème fraîche
  • Juice 1 lemon
  • 6 tbsp Parmesan, finely grated
  • small handful of parsley, chopped

  8. Shred the cooked chicken and add it to the pasta pan.
  9. Add the crème fraîche, lemon juice, 4 tablespoons of Parmesan cheese and the reserved cooking water to the pasta pan with the chicken.
  10. Gently heat the mixture and season to taste.
  11. Stir in parsley and cooked pasta.
  12. Serve the dish sprinkled with the remaining Parmesan cheese.
