  • 4 skinless chicken breast fillets
  • 1 tsp olive oil
  • 300g tagliatelle
  • 175g frozen broad beans
  • 85 g low-fat crème fraîche
  • Juice 1 lemon
  • 6 tbsp Parmesan, finely grated
  • small handful of parsley, chopped

  4. Grill the chicken for about 12 minutes, turning halfway through the cooking time.
  5. Meanwhile, cook the pasta in a separate pot.
  6. Add the broad beans to the pasta for the last 3 minutes to cook.
  7. Drain the pasta and beans, but reserve 150 ml of the cooking water.
  8. Shred the cooked chicken and add it to the pasta pan.
  9. Add the crème fraîche, lemon juice, 4 tablespoons of Parmesan cheese and the reserved cooking water to the pasta pan with the chicken.
  10. Gently heat the mixture and season to taste.
  11. Stir in parsley and cooked pasta.
  12. Serve the dish sprinkled with the remaining Parmesan cheese.
