Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas 4 and make sure there is a rack in the middle of the oven.
  2. Brush a rectangular baking tray or a small roasting tin (approx. 20 x 30 cm) with butter.
  3. Cut a piece of baking paper slightly larger than the tin, slide it in and smooth it out with your hands so that it sticks to the butter.
  4. Cut the corners with scissors so that the paper sits neatly.
  5. Place all cake ingredients and a pinch of salt in a large bowl.
  6. Beat with electric mixers until creamy and smooth.
  7. Pour the mixture into the mold and level the lid.
  8. Pour the lemon curd in thick strips over the dough.
  9. Use the handle of a spoon to swirl the quark into the cake. Be careful not to toss too much, otherwise the pattern will no longer be visible after cooking.
  10. Bake for about 35 minutes or until the dough is golden brown and risen. The cake should have shrunk slightly from the edge of the pan and feel springy.

  13. To make the drizzle, mix 4 tablespoons of sugar and lemon juice.
  14. Pour the streusel mixture over the cake.
  15. Mix the lemon zest with 1 tablespoon of sugar and sprinkle over the cake.
  16. Allow the cake to cool completely.
  17. Lift the cake onto a board, peel off the sides of the baking paper and cut the cake into fingers.
