- 600 g sweet potatoes, diced
- 1 tbsp sunflower oil
- 1 large red onion, thinly sliced
- 400g cooked chorizo sausages, skinned and crumbled
- 400g can of chickpeas, rinsed and drained
- 4 large eggs
- 1 green chili pepper, cut into thin rings
