Ingredients
- 2 teaspoons olive oil, plus some for brushing
- 1 onion, chopped
- 3 cloves of garlic
- 750 g sweet potatoes, peeled and diced
- 1l vegetable broth
- 2 rosemary sprigs
- 8 slices of bread (ciabatta is good)
Preparation steps
- Heat the oil in a large pot and fry the onion until soft.
- Crush 2 cloves of garlic, add to the onion and fry for another minute.
- Stir in the sweet potato, cover with the broth and bring to a boil.
- Strip the leaves from one of the rosemary sprigs and add them to the pan.
- Simmer for 10 minutes until the potato is soft.
- In the meantime, preheat the oven to 200°C/fan 180°C/gas 6.
- Place the bread on a baking sheet and brush with olive oil.
- Cut the remaining garlic clove in half, then rub the cut side over the bread along with the leaves from the second rosemary sprig.
- Season and then bake for 10 minutes until crispy and golden brown.
- Using a hand blender, puree the soup roughly, adding a splash of hot water if it seems too thick.
- Season well, then pour into preheated bowls and serve with the toasts.
