Ingredients

  • 2 medium sweet potatoes
  • 3 tbsp olive oil
  • 100g kale
  • 2 tbsp dukkah spice mix
  • 200 ml Greek yogurt
  • 1 tbsp lemon juice
  • 2 tsp sumac
  • ½ garlic clove, crushed

Preparation steps

  1. Preheat the oven to 150°C/130°C fan/gas 2.
  2. Leaving the skin on the sweet potatoes, use a mandolin or sharp knife to cut them lengthwise into thin slices, about 1/2 inch thick.
  3. Toss the sweet potato slices in a bowl with 1/2 tablespoon olive oil and coat on all sides.
  4. Tip the coated sweet potato slices onto a large baking sheet (or divide between two trays) lined with baking plaster.
  5. Cut the kale into large pieces.
  6. Rub the kale well with the remaining olive oil in the same bowl you used for the sweet potato.
  7. Place the coated kale on another large baking sheet and sprinkle with 1 tablespoon of the dukkah seasoning mix.
  8. Bake the sweet potato slices and kale for 20 minutes.
  9. Remove the baking sheet with the kale from the oven.
  10. Bake the sweet potato slices for another 30 minutes.
  11. Sprinkle both the sweet potato slices and kale with salt.
  12. Place the sweet potato slices and kale on a large serving plate.
  13. In a small bowl, mix all the dip ingredients with some spices and the remaining dukka.
  14. Refrigerate the dip until serving.
  15. The dip can be made a day in advance.
