Sweet potato and goat cheese ravioli

  • 2 sweet potatoes

  11. If you don’t have a pasta machine, use a heavy rolling pin to roll the dough out as thinly as possible.
  12. Using a ravioli cutter or a 6cm cookie cutter, cut out circles.
  13. Work quickly so that the pasta doesn’t dry out.
  14. Place the circles on a semolina-dusted surface and cover with cling film while you cut the rest.
  15. Place a small teaspoon of filling in the center of each round.
  16. Moisten the edges with water and then place another round on top.
  17. Seal the edges with your fingertips, displacing all air.
  18. Place the ravioli on a tea towel dusted with semolina and let it dry for a few minutes.
  19. Cook the ravioli in a large pot of gently boiling salted water for 4-5 minutes.
  20. Do not use full cooking as this may cause the ravioli to burst.
  21. Drain the ravioli and serve with a little chili oil, parmesan and pumpkin seeds.
