Preparation steps

Sweet party snacks

  1. Cream tea bites
    • Divide 6 scones.
    • Place together with a 227g tub of clotted cream and half a jar of strawberry jam.
    • Cut into quarters and serve like triangular sandwiches, point side up (makes 24 pieces).
  • Mini chocolate ice cream balls
    • Using a ball cutter, spoon 25 small balls of vanilla ice cream out of a 500 g cup.
    • Freeze on a tray until solid, 1 hour.
    • Melt 200 g of dark chocolate and spread 100 g of finely chopped pistachios on a tray.
    • Using a cocktail pick, dip the balls into the chocolate, then roll them in the nuts and freeze for 30 minutes or until ready to serve (makes 25).
  • Cheat’s Lamingtons
    • Buy 2 x 350g Madeira sponge cake.
    • Trim and then cut into 20 x 3 cm cubes.
    • Freeze until solid.
    • Heat 200ml double cream, then remove from heat and stir in 200g chopped white chocolate until melted.
    • Allow to cool slightly.
    • Spread 2 cups of shredded coconut on a tray.
    • Dip each frozen cake completely into the chocolate, then roll the coconut in to cover all sides (it might help to thread each cake onto a skewer).
    • Allow to set on baking paper for at least 30 minutes before serving (makes 20).
  • Apple marzipan tarts
    • Roll out a 375g package of puff pastry thinly.
    • Divide into squares (approx. 20 x 5 cm) and prick each piece all over with a fork.
    • Spread on baking sheets.
    • Peel, core and cut 2 Bramley apples into 2cm pieces.
    • Place a small slice of marzipan on each square (you will need around 200g), place some apple on top and bake at 200°C/180°C fan/gas mark 6 for 10 minutes until crispy.
    • Dust with powdered sugar to serve (makes 20 pieces).
  • Lemon fantasies
    • Using a 4cm cutter, cut 20 circles from store-bought lemon tarts (you will need 2 large tarts).
    • Place a raspberry on top of each and dust with powdered sugar.
