Ingredients

  • 500g pack of ready-made sweet shortcrust pastry
  • 4 eggs, beaten
  • Zest and squeeze 2 lemons
  • 140g powdered sugar
  • 200 ml can of crème fraîche
  • 100g pack of fresh goat cheese without rind, coarsely crumbled
  • Blackberries or other fruit for serving (optional)

Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas 4.
  2. Roll out the dough and line a 20cm loose-bottomed tart tin about 3-4cm deep.
  3. Chill the tart pan lined with baking paper for 30 minutes.
  4. Line the dough with baking paper and fill it with baking beans.
  5. Bake for 15 minutes.
  6. Remove paper and beans.
  7. Brush the inside of the cake with a little beaten egg.
  8. Return to the oven for 5 minutes to crisp up.
  9. Remove heat and reduce to 150°C/fan 130°C/gas 2.
  10. Mix zest, juice and sugar until sugar is dissolved.
  11. Stir in the remaining eggs and crème fraîche.
  12. Pour the mixture into a pitcher.
  13. Place the tart base on a baking tray in the oven.
  14. Pour in the lemon mixture.
  15. Sprinkle the goat cheese on top.
  16. Bake for 1 hour – 1 hour and 10 minutes.
  17. Until it is firm and there is a slight wobble in the middle.
  18. Serve warm or cold, garnished with fruit.
