- 1 large sweet potato
- 2½ tsp olive oil
- 1 garlic clove, crushed

- 100g raw king prawns

- Bake for 45 minutes until really soft.
- Meanwhile, heat the remaining oil in a frying pan.
- Add the garlic and pepper and cook for 2 minutes, being careful not to burn the garlic.
- Add the chili flakes, half the pepper, vinegar, ketchup, 1 tablespoon of water and the shrimp to the pan.
- Let it bubble for 2 minutes until the shrimp are cooked through.
- Stir in the parsley, leaving some to sprinkle on top at the end.
- Mix the remaining pepper into the mayonnaise.
- Once the potato is cooked, split it in half.
- Add the shrimp mixture and top with the paprika mayonnaise.
- Scatter the remaining parsley over the top and serve.
