  • 1 large sweet potato
  • 2½ tsp olive oil
  • 1 garlic clove, crushed
  • 1 small red pointed pepper, cut into rings
  • Pinch of chili flakes
  • ½ tsp sweet paprika

  • 1 tbsp tomato ketchup
  • 100g raw king prawns
  • a few sprigs of parsley, chopped

  2. Place the sweet potato on a baking tray, rub all over with a little oil and season with salt.
  3. Bake for 45 minutes until really soft.
  4. Meanwhile, heat the remaining oil in a frying pan.
  5. Add the garlic and pepper and cook for 2 minutes, being careful not to burn the garlic.
  6. Add the chili flakes, half the pepper, vinegar, ketchup, 1 tablespoon of water and the shrimp to the pan.
  7. Let it bubble for 2 minutes until the shrimp are cooked through.
  8. Stir in the parsley, leaving some to sprinkle on top at the end.
  9. Mix the remaining pepper into the mayonnaise.
  10. Once the potato is cooked, split it in half.
  11. Add the shrimp mixture and top with the paprika mayonnaise.
  12. Scatter the remaining parsley over the top and serve.
