Ingredients

  • 1 tsp Dijon mustard
  • Handful of basil leaves or 1 teaspoon dried basil
  • ½ small red onion, chopped
  • 30 g dried tomatoes

Preparation steps

  1. Add the balsamic vinegar to a blender.
  2. Add the olive oil from a jar of dried tomatoes and top up with more olive oil if necessary.
  3. Add Dijon mustard, basil leaves or dried basil, red onion, water and dried tomatoes (drained) to the blender.
  4. Blend the mixture until it thickens and emulsifies, adding a splash more water if necessary.
  5. Season the dressing with salt and pepper.
  6. Either serve the dressing with a salad or drizzle it over the feta cheese.
  7. Store leftover dressing in the refrigerator for up to five days.
