  • 4 tbsp soft brown sugar
  • 1 tbsp vegetable oil

  • half a 250g pack of baby corn, halved lengthwise
  • 2 tbsp Thai red curry paste (we used Bart’s)
  • 1 red bell pepper, deseeded and sliced
  • Drizzle with Thai fish sauce or low-salt soy sauce
  • 200g cooked, frozen prawns, thawed

Preparation steps

  1. Put the sugar in a wok, add a splash of water and let it dissolve over low heat.
  2. Once dissolved, increase heat until bubbles form, then pour into a heatproof bowl.
  3. Heat the oil in the wok, then stir-fry the broccoli and corn until they bubble, 3 minutes.
  4. Stir the curry paste into the caramel and then pour it into the wok.
  5. Add the pepper and continue cooking for 2 minutes.
  6. Add some fish sauce or soy, add the shrimp and fry again until heated through.
  7. Serve immediately with rice or noodles.
