Ingredients

  • 2 tbsp reduced sugar sweet chili sauce (see tip below)
  • 1 lime, juiced
  • 2 teaspoons reduced salt soy sauce or wheat-free tamari
  • 2 salmon fillets
  • 1 carrot, finely chopped
  • ½ daikon radish, halved and finely chopped
  • 100g radishes, finely chopped
  • small handful of coriander, finely chopped
  • 1 Little Gem lettuce, leaves separated

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. In a bowl, mix the sweet chili sauce with half the lime juice and half the soy sauce or tamari.
  3. Pat the salmon fillets dry with kitchen paper. Place them on a baking sheet.
  4. Pour the chili sauce mixture over the salmon fillets.
  5. Bake the salmon in the preheated oven for 10 minutes.
  6. After 10 minutes, turn on the grill to high heat.

  8. Using the back of a fork, gently shred the salmon flesh by pressing on it.
  9. In a separate bowl, combine carrot, daikon, radishes and cilantro.
  10. Add the remaining soy sauce and lime juice to the vegetable mixture and season with salt and pepper.
  11. To serve, fill the lettuce leaves with the salad mixture and salmon flakes.
