  • 8 red peppers, deseeded and roughly chopped
  • 10 red chili peppers, roughly chopped
  • finger-sized piece of fresh ginger root, peeled and roughly chopped
  • 8 garlic cloves, peeled
  • 400 g canned cherry tomatoes
  • 750g golden powdered sugar
  • 250 ml red wine vinegar

Preparation steps

  1. Put the peppers, chilies (with seeds), ginger and garlic in a food processor and chop very finely.
  2. Place in a heavy-bottomed pan with the tomatoes, sugar and vinegar and bring to the boil.
  3. Skim off any foam that comes to the surface, then reduce the heat and simmer for about 50 minutes, stirring occasionally.
  4. Once the jam becomes sticky, cook for another 10-15 minutes, stirring frequently to prevent it from sticking and burning.
  5. It should now look like thick, bubbling lava.
  6. Allow to cool slightly, transfer to sterilized jars and then allow to cool completely.
  7. Store in a cool, dark cupboard for 3 months – store in the fridge after opening.
