- Place in a heavy-bottomed pan with the tomatoes, sugar and vinegar and bring to the boil.
- Skim off any foam that comes to the surface, then reduce the heat and simmer for about 50 minutes, stirring occasionally.
- Once the jam becomes sticky, cook for another 10-15 minutes, stirring frequently to prevent it from sticking and burning.
- It should now look like thick, bubbling lava.
- Allow to cool slightly, transfer to sterilized jars and then allow to cool completely.
- Store in a cool, dark cupboard for 3 months – store in the fridge after opening.
