Sweet and spicy wings with summer slaw

Ingredients

  • 4 tbsp curry paste (we used tikka)
  • 3 tbsp mango chutney
  • 1 kg chicken wings
  • 200g bag of radishes, sliced
  • 1 cucumber, halved lengthwise and sliced
  • small bunch of mint, roughly chopped
  • Juice 1 lemon
  • cooked rice for serving (optional)

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. In a large bowl, mix the curry paste with 2 tablespoons of mango chutney and some spices.
  3. Add the wings and toss to coat well.
  4. Place the wings in a single layer on one large baking sheet or two smaller baking sheets.
  5. Roast until cooked through and golden brown (or grill and turn until cooked through), 40-45 minutes.
  6. In the meantime, mix the radish and cucumber with the mint, remaining mango chutney and lemon juice.
  7. Transfer to a serving bowl.
  8. Stack the wings on a large plate.
  9. Serve with summer salad and rice if desired.
