Ingredients
- 50g can of anchovies in oil
- 2 tbsp anchovy oil
- 1 onion, thinly sliced
- large sprig of thyme, leaves picked off
- 2 large turnips
- 300 ml pot of double cream
- 3 tbsp fresh breadcrumbs
- 2 tbsp grated Parmesan
Preparation steps
- Preheat oven to 200°C/180°C fan/gas 6.
- Drain the anchovies, but reserve 2 tablespoons oil and heat in a skillet. Then cook the onion for 10 minutes until soft.
- Chop the anchovies and half of the thyme and stir them into the onion.
- Peel the turnips, then quarter them and cut them into slices.
- In a large bowl, mix the beets with the onion, two-thirds of the cream and some ground black pepper.
- Place the beets in a baking dish, cover with foil and bake for 30 minutes.
- Take the dish out of the oven, remove the foil, press it down with a slice of fish and drizzle with the remaining cream.
- Sprinkle the breadcrumbs and Parmesan on top, then bake for another hour or so, until the beets are golden brown and tender.
- Sprinkle with the remaining thyme.
