  • 2 tbsp anchovy oil

  • large sprig of thyme, leaves picked off
  • 2 large turnips
  • 300 ml pot of double cream
  • 3 tbsp fresh breadcrumbs
  • 2 tbsp grated Parmesan

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Drain the anchovies, but reserve 2 tablespoons oil and heat in a skillet. Then cook the onion for 10 minutes until soft.
  3. Chop the anchovies and half of the thyme and stir them into the onion.
  4. Peel the turnips, then quarter them and cut them into slices.
  5. In a large bowl, mix the beets with the onion, two-thirds of the cream and some ground black pepper.
  6. Place the beets in a baking dish, cover with foil and bake for 30 minutes.
  7. Take the dish out of the oven, remove the foil, press it down with a slice of fish and drizzle with the remaining cream.
  8. Sprinkle the breadcrumbs and Parmesan on top, then bake for another hour or so, until the beets are golden brown and tender.
  9. Sprinkle with the remaining thyme.
