- 6 juicy lemons, 3 of them peeled

- 85g golden icing sugar, plus 50g, weighed separately
- 140g self-raising flour
- 85g crushed tallow
- 50g golden powdered sugar, plus 1 teaspoon for sprinkling (optional)
- 2 large eggs
- ½ tsp vanilla paste or extract
- 4 tablespoons of milk
- Preheat the oven to 180°C/160°C fan/gas 4.
- Put half of the lemon peel in a medium, deep baking dish (about 2 liters) and the other half in a large mixing bowl.
- Using a serrated knife, cut the peel and pulp from the peeled fruit, then cut the flesh into thin slices.
- Put the lemon slices in the baking dish along with the diced butter and 85 g sugar.
- Cut a few thin lemon slices with zest to decorate the pudding later.
- Squeeze the juice from the remaining lemons, there should be around 150 ml in total.
- Mix the lemon juice with the 50 g sugar and set aside.
- Add flour, suet, sugar, a pinch of salt, eggs, vanilla and milk to the large mixing bowl.
- Mix the ingredients in the mixing bowl until a smooth dough forms.
- Pour the dough into the baking dish over the lemons, butter and sugar and smooth the surface.
- Spread the lemon slices with peel over the dough.
- Carefully pour the lemon-sugar mixture over the pudding, making sure it sinks as it cooks.
- Carefully place the baking dish in the oven and bake for 40 minutes or until the sponge cake is risen and golden brown and the syrup is bubbling around the edges.
