  • 85g golden icing sugar, plus 50g, weighed separately
  • 140g self-raising flour
  • 85g crushed tallow
  • 50g golden powdered sugar, plus 1 teaspoon for sprinkling (optional)
  • 2 large eggs
  • ½ tsp vanilla paste or extract
  • 4 tablespoons of milk

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Put half of the lemon peel in a medium, deep baking dish (about 2 liters) and the other half in a large mixing bowl.
  3. Using a serrated knife, cut the peel and pulp from the peeled fruit, then cut the flesh into thin slices.
  4. Put the lemon slices in the baking dish along with the diced butter and 85 g sugar.
  5. Cut a few thin lemon slices with zest to decorate the pudding later.
  6. Squeeze the juice from the remaining lemons, there should be around 150 ml in total.
  7. Mix the lemon juice with the 50 g sugar and set aside.
  8. Add flour, suet, sugar, a pinch of salt, eggs, vanilla and milk to the large mixing bowl.
  9. Mix the ingredients in the mixing bowl until a smooth dough forms.
  10. Pour the dough into the baking dish over the lemons, butter and sugar and smooth the surface.
  11. Spread the lemon slices with peel over the dough.
  12. Carefully pour the lemon-sugar mixture over the pudding, making sure it sinks as it cooks.
  13. Carefully place the baking dish in the oven and bake for 40 minutes or until the sponge cake is risen and golden brown and the syrup is bubbling around the edges.
  14. Sprinkle 1 teaspoon of sugar on top if desired and then serve the pudding with a splash of cream to tone down the spice of the sauce.

Double cream

Nevertheless, it can provide small amounts of vitamins A and D as well as calcium. Vitamin A is essential for maintaining healthy skin, vision and immune function, while vitamin D is important for bone health.

Unsalted butter

The unsalted butter used in Sussex Puddle Pudding adds a rich touch to the dish. However, due to their high saturated fat content, it is important to consume them in moderation. However, butter provides small amounts of vitamins such as vitamin A, vitamin E and vitamin K, which play an important role in your overall health.

Golden powdered sugar

Golden powdered sugar is used in both pudding and as a streusel topping. Although it is still sugar and should be consumed in moderation, using golden powdered sugar instead of refined white sugar provides a slightly higher mineral content. It contains small amounts of minerals such as calcium and potassium.

Self-raising flour

With Sussex Puddle Pudding, self-rising flour serves as the base for the pudding dough. Flour provides carbohydrates, which are a source of energy for the body. However, it is important to note that self-raising flour is not a significant source of nutrients and should be consumed as part of a balanced diet.

Shredded suet

Tallow is obtained from animal fat and gives the pudding more body and lightness. While it enhances the taste and texture of the dessert, it is high in saturated fat and should be consumed in moderation for a balanced diet.

Eggs

Eggs are not only an important ingredient in binding the pudding together, but they also contribute to the nutritional value. They are an excellent source of high-quality protein and contain important vitamins and minerals such as vitamin B12, selenium and choline. Just make sure the eggs you use are fresh and stored properly.

Vanilla paste or extract

Vanilla paste or extract gives the pudding a pleasant aroma and taste. Although it doesn’t offer any significant nutritional benefits, it can increase the overall enjoyment of the dessert.

milk

Milk is used to moisten the dough and give the pudding a soft and tender consistency. It contains essential nutrients such as protein, calcium and vitamin D, which are important for bone health and overall well-being.

Although Sussex Puddle Pudding is a delicious treat, it is important to remember that it should be enjoyed in moderation as part of a balanced diet. By incorporating these ingredients into your diet occasionally, you can enjoy the flavors while benefiting from their nutritional benefits.
