Ingredients

  • 250g purple sprouted broccoli, halved (or into bite-sized pieces)
  • 175g frozen soybeans
  • 2 ripe avocados
  • 250g bag cooked quinoa
  • 100g bag of baby spinach
  • A handful of soft herbs (parsley, basil, coriander or mint work well), chopped
  • 100g can of pomegranate seeds
  • 100g bag of pumpkin seeds, toasted in a dry pan until they pop
  • Zest and squeeze 1 lemon or lime
  • Zest and juice of 1 orange
  • 1 tbsp white wine vinegar
  • 2 tbsp Dijon mustard (or gluten-free alternative)
  • 2 tbsp extra virgin rapeseed oil

Preparation steps

  1. Bring a pot of water to a boil and fill a large bowl with ice-cold water.
  2. Add the broccoli to the pan and cook for 2 minutes.
  3. Add the soybeans and cook for another 1-2 minutes.
  4. Drain the vegetables and add them to cold water.
  5. Let sit for 1-2 minutes until cool.
  6. Drain the vegetables and leave them in the sieve.
  7. Dry the large bowl.
  8. Add the dressing ingredients to the bowl and stir.
  9. Halve, stone and peel the avocados.
  10. Cut the avocados into rough cubes and add to the dressing.
  11. Add the quinoa, spinach, herbs, half of the pomegranate and pumpkin seeds and the cooked vegetables to the bowl.
  12. Mix everything carefully.
  13. Transfer the salad to a serving platter.
  14. Sprinkle with the remaining seeds.
  15. Surcharge.

Any leftovers can be left in the fridge for lunch the next day.
