Ingredients

  • 450 g ripe plums (weighed after pitting), roughly chopped
  • 550g granulated sugar
  • 100g powdered sugar
  • 100g cornstarch
  • 11 sheets of gelatin
  • 2 large egg whites

Preparation steps

  1. Put the plums in a saucepan with 50 g of sugar. Cover with a lid and cook over low heat, stirring occasionally, until really soft and mushy – this will take about 20 minutes. Puree in a blender or food processor until smooth.
  2. Line a 20cm diameter square tin with baking paper. Mix the powdered sugar and cornstarch and sprinkle a little over the bottom of the mold. Place the gelatine sheets one at a time in a bowl of cold water to soften.
  3. Put the remaining sugar in a saucepan with 200 ml of water. Heat gently until the sugar is dissolved, then increase the heat, add a candy thermometer and cook until the temperature reaches 125°C.
  4. Once the sugar has reached the right temperature, beat the egg whites in your largest bowl with an electric whisk until stiff peaks form. When the sugar syrup is ready, stir in the plum jam, then squeeze out the excess water from the gelatine leaves and stir them in as well until they are completely melted. With the whisk running, gradually pour the plum sugar syrup onto the egg whites and stir in. Once all the syrup is added, continue to beat the mixture until it forms a nice, thick mixture. Pour into the prepared mold and let it solidify at room temperature for a few hours.
  5. When the dough is firm, dust another sheet of parchment with some of the cornstarch/icing mixture and tip the marshmallows onto it. Using a large, sharp knife dipped in more dusting mixture, cut the marshmallows into rough squares, then toss them with more dusting mixture to coat completely.
