Ingredients

  • 100g pecans
  • 140g self-raising flour, sifted

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas mark 4.
  2. Grease a round cake tin (18 cm) and line it with baking paper.
  3. Set aside 12 pecans and roughly chop the rest.

  8. Pour the mixture into the lined pan, smooth the surface and press the whole pecans so that a circle forms around the edge.
  9. Bake for 1 hour – 1 hour and 10 minutes, until the top feels springy and a skewer inserted into the cake comes out clean.
  10. After 50 minutes, check if the cake is getting too dark and cover loosely with foil.
  11. Let the cake cool on a wire rack for 10 minutes, then turn it out of the tin and let it cool.
  12. Serve the cake slightly warm or cold. It lasts up to five days in the can.
  13. Drizzle with agave syrup if desired before serving.
