Stuffed tomatoes with minced lamb, dill and rice

  • 4 beefsteak tomatoes
  • pinch of sugar
  • 4 tablespoons Greek extra virgin olive oil, plus a little extra for drizzling
  • 1 Spanish onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 200g minced lamb
  • 1 tsp ground cinnamon
  • 2 tbsp tomato paste
  • 50g long grain rice
  • 100 ml chicken broth
  • 4 tbsp chopped dill
  • 2 tbsp chopped flat-leaf parsley
  • 1 tbsp chopped mint

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.

  2. Cut off the tops of the tomatoes and reserve.

  3. Scoop out most of the pulp with a teaspoon, being careful not to break the skin.

  4. Chop the pulp finely and collect the juice.

  5. Sprinkle the inside of the tomatoes with a little sugar to remove the acid.

  6. Place the tomatoes on a baking sheet.

  7. Heat 2 tablespoons olive oil in a large frying pan.

  8. Add the onion and garlic to the pan.

  9. Cook until soft but not discolored, about 10 minutes.

  10. Add the lamb, cinnamon and tomato puree to the pan.

  11. Increase the heat and fry until the meat is browned.

  12. Add tomato paste and juice, rice and broth to the pan.

  13. Season generously with salt and pepper.

  14. Bring to the boil and then simmer for 15 minutes until the rice is tender and the liquid has been absorbed.

  15. Allow to cool slightly, then stir in the herbs.

  16. Fill the tomatoes up to the edge.

  17. Cover the tomatoes with their lids.

  18. Drizzle with 2 tablespoons more olive oil.

  19. Sprinkle 3 tablespoons of water into the bowl.

  20. Bake for 35 minutes.

  21. Serve hot or cold with salad and crusty bread.
