Ingredients

  • 250g pouch rice with mushrooms (Uncle Ben’s or Rizazz)
  • 3 tbsp pesto
  • 4 large tomatoes
  • 2 zucchini
  • 1 tbsp olive oil

  2. Mix the rice with 2 tablespoons of pesto.
  3. Cut the top off the tomatoes and scoop out the insides.
  4. Fill the empty bowls with the rice mixture, press down gently, and then replace the lids.
  5. Cut the zucchini into slices and mix with the remaining pesto and oil.
  6. Spread on a roasting tray and place the tomatoes in between.
  7. Bake for 20-25 minutes until the tomatoes and zucchini are soft.
