Stuffed marrow casserole

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 tbsp dried herb mixture
  • 500g pack of minced turkey meat
  • 2 x 400g cans of chopped tomatoes
  • 1 pumpkin, cut into 4 cm thick slices
  • 4 tbsp breadcrumbs
  • 3 tbsp grated Parmesan

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Heat the oil in a large skillet and sauté the onion, garlic and 2 teaspoons of the herbs until softened, 3 minutes.
  3. Add the turkey and brown all over, then add the tomatoes and cook for another 5 minutes.
  4. Spoon out the center of the pulp and discard (or fry, then freeze for another time – try mashed potatoes).
  5. Arrange the slices in a baking dish.
  6. Place the minced meat in the center of each pulp disc and then spoon the rest over the top.
  7. Cover with foil and bake for 30 minutes.
  8. In the meantime, mix the remaining herbs with the breadcrumbs and Parmesan.
  9. Remove the pulp from the oven, cover and sprinkle over the crumbs.
  10. Return to the oven for another 10 minutes, until the crumbs are golden brown and crispy and the pulp is tender.
