Stuffed Italian peppers

  • 3 red Romano peppers, halved and deseeded
  • 160g pack of semi-dried tomatoes and mozzarella balls in olive oil
  • 140g couscous
  • 2 tbsp pesto
  • 5 tbsp dried breadcrumbs

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Arrange the peppers, cut side up, on a baking sheet.
  3. Brush the peppers with a little oil from the tomato and mozzarella package and then season.
  4. Cook the peppers for 10 minutes to soften them slightly.
  5. Mix couscous with pesto in a bowl.
  6. Pour 125ml boiling water over the couscous and cover the bowl.
  7. Let the couscous fluff up for 5 minutes.
  8. Drain the tomatoes and mozzarella well.
  9. Mix the drained tomatoes and mozzarella into the couscous.
  10. Divide the couscous mixture over the peppers.
  11. Sprinkle breadcrumbs over the stuffed peppers.
  12. Bake the peppers for 15-20 minutes or until the top is crispy and the peppers are tender.
