Stuffed chicken with lemon, capers and chili

  • 2 large chicken breasts, with skin on
  • 4 tbsp ricotta
  • Zest 1 lemon
  • 2 tbsp grated Parmesan
  • 1 tsp capers
  • 1 teaspoon crushed chili flakes
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 400 g canned chopped tomatoes
  • small handful of parsley
  • for serving, boiled potatoes or mashed potatoes

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Cut a slit into the side of each chicken breast, then use your finger to form a pocket.
  3. In a small bowl, mix together the ricotta, half of the lemon zest, Parmesan, capers, chili flakes and some spices.
  4. Push the mixture into the pockets, then seal each opening with a toothpick.
  5. Place the chicken in an ovenproof dish, drizzle 1 tablespoon of oil over it and season.
  6. Bake for 15-20 minutes until everything is cooked through.
  7. In the meantime prepare the sauce.
  8. Heat the remaining oil in a saucepan, add the garlic and fry for 2 minutes until golden brown.
  9. Add the tomatoes, season and simmer for another 10 minutes until the mixture has thickened.
  10. Divide between 2 plates, place the chicken on top and sprinkle with the parsley and the remaining zest.
  11. Serve with potatoes if desired.
