  • 140g frozen soybeans or peas
  • 200 g hummus (reserve 2 tbsp for the dressing)
  • 2 red peppers (or a mix of different colors), finely chopped
  • Half a cucumber, finely chopped
  • 200 g cherry tomatoes, quartered
  • 2 large carrots
  • small packet of basil
  • 2 large carrots, peeled and grated
  • 4 tbsp pumpkin seeds (optional)
  • Zest and squeeze 1 lemon
  • 1 tbsp clear honey
  • 2 tbsp hummus (from the can above)

Preparation steps

  1. First prepare the dressing by putting the ingredients in a jam jar along with 1 tablespoon of water.
  2. Screw the lid on tightly and shake well to mix the dressing. Set it aside for later use.
  3. Bring water to a boil in a small pot. Add the beans or peas and cook until tender, 1 minute.
  4. Drain beans or peas and rinse with cold water until cool.
  5. Take 6 large jam jars and distribute the remaining hummus evenly over them.
  6. Add the drained soybeans or peas, peppers, cucumbers, tomatoes, basil leaves, carrots, and pumpkin seeds (if using) to the hummus in each jar.
  7. Screw the lids on tightly and place the jars in the refrigerator until needed. They can be kept in the fridge for 24 hours.
  8. When you’re ready to serve the salad, pass the glasses to everyone.
  9. Have each person pour some of the prepared dressing over their salad in the jar.
