  • 140g plain flour
  • 50g ground almonds
  • 100g golden powdered sugar
  • 100g butter, chopped
  • 25g almond flakes
  • 85g golden powdered sugar
  • 1 heaped tablespoon of cornstarch
  • 450g strawberries, peeled and halved if large
  • 450 g rhubarb, cut into rough pieces
  • Vanilla ice cream for serving (optional)

Preparation steps

  1. Preheat the oven to 190°C/170°C fan/gas 5.
  2. For the streusel, mix the flour, ground almonds and sugar in a bowl.
  3. Rub in the butter as if you were baking pastry.
  4. Pour the mixture onto a large baking sheet and spread it evenly.
  5. Form small clumps in the mixture by squeezing them with your fingers.
  6. Bake for 10 minutes.
  7. In the meantime, make the fruit layer.
  8. Mix sugar and cornstarch in a large bowl.
  9. Fold in the berries and rhubarb until everything is well coated.
  10. Pour the mixture into a pan and cook over low heat.
  11. Stir until the fruit softens slightly and the released juice thickens.
  12. Pour the fruit mixture into an ovenproof dish and scrape in the thickened juice.
  13. Add the almond flakes to the crumble mixture.
  14. Sprinkle on top.
  15. Bake for 20 minutes until the fruit is tender and the streusel is golden brown.
  16. Allow to cool slightly.
  17. Serve warm with vanilla ice cream if desired.
