Ingredients
- ½ medium-sized cantaloupe (approx. 350 g), skinned and cut into pieces
- 250g strawberries, peeled and sliced
- 4 ginger cookies, coarsely crushed (try Fox’s Crinkle Crunch)
- 2 pieces of ginger in syrup (approx. 25 g), chopped, plus 2 teaspoons of syrup from the jar
- 2 x 150g / 5oz cups of Greek yogurt
- 4 tsp light muscovado sugar
Preparation steps
- In a large bowl, gently mix the melon and strawberries with a spoon or your hands, then pour half into four glass cups.
- Sprinkle with half of the cookie crumbs.
- Stir the chopped ginger and syrup into the yogurt and pour into the cups.
- Stack the remaining fruit on top and sprinkle with the remaining crumbs.
- Sprinkle a teaspoon of muscovado sugar on each dessert and refrigerate until ready to serve (up to 2 hours in advance) – the sugar will gradually melt and create a delicious toffee flavor.
- Remove from the refrigerator about 15 minutes before serving so that they are not too cold.
