Strawberry jam without cooking

  • 850g powdered sugar
  • 500 g firm, ripe strawberries, peeled
  • ½ bottle of liquid pectin (Certo) or 1 bag of pectin crystals
  • Juice of a medium-sized lemon (approx. 3-4 tbsp)

Preparation steps

  1. Preheat the oven to 140°C/fan 120°C/gas 1.
  2. Place the sugar in a shallow bowl and heat in the oven for about 10 minutes.
  3. Peel the strawberries and mash them in a large bowl with a potato masher or fork.
  4. Stir in the warm sugar and let stand at room temperature, stirring occasionally, until the sugar has dissolved, about 4 hours.
  5. Stir in the pectin and stir well.
  6. Add 3 tablespoons lemon juice to the mixture.
  7. Pour the pulp into 5-6 small, clean, freezer-safe containers or jars.
  8. Cover the containers loosely with plastic wrap and let them sit at room temperature for about 3 hours.
  9. Check to see if the mixture sets. If it still seems quite runny, place the pots back in the bowl and mix in another tablespoon of lemon juice.
  10. Repeat the process with the pots and leave at room temperature for at least 24 hours until the mixture softens.
  11. Cover tightly with lids and freeze until ready to eat.
  12. Store in the refrigerator after thawing. The jam may become cloudy after freezing, but once it has thawed, just stir it and it will become clear again.
