- 850g powdered sugar
- 500 g firm, ripe strawberries, peeled
- ½ bottle of liquid pectin (Certo) or 1 bag of pectin crystals
- Juice of a medium-sized lemon (approx. 3-4 tbsp)

- Preheat the oven to 140°C/fan 120°C/gas 1.
- Place the sugar in a shallow bowl and heat in the oven for about 10 minutes.
- Peel the strawberries and mash them in a large bowl with a potato masher or fork.

- Check to see if the mixture sets. If it still seems quite runny, place the pots back in the bowl and mix in another tablespoon of lemon juice.
- Repeat the process with the pots and leave at room temperature for at least 24 hours until the mixture softens.
- Cover tightly with lids and freeze until ready to eat.
- Store in the refrigerator after thawing. The jam may become cloudy after freezing, but once it has thawed, just stir it and it will become clear again.
