Ingredients

  • 175g butter, frozen
  • 250g self-raising flour
  • 1 teaspoon Baking powder
  • 50g golden icing sugar, plus a little sugar for sprinkling
  • 150 ml cold whole milk
  • a small squeeze of lemon juice
  • beaten egg, for glazing
  • 350g strawberries, peeled and sliced
  • 50g golden icing sugar, plus a little sugar for sprinkling
  • 1 tbsp fine strawberry jam (we like Tiptree Little Scarlet Strawberry Conserve)
  • 140g clotted cream
  • small drop of vanilla extract

If possible, place them in the sun and let them soften a bit – this will really enhance the flavor. Pay attention to different varieties; Try a Pegasus or a Cambridge Favorite or, if you can, a Marie De Bois, which resembles a wild strawberry.

Preparation steps

  1. Preheat oven to 220°C/200°C fan/gas 7.
  2. Grate the butter on the coarse side of a box grater into a bowl and then place it back in the freezer for 5 minutes.
  3. Using a spatula, quickly mix the butter with the flour, baking powder and sugar.
  4. Add milk and lemon juice and mix until a buttered dough forms.
  5. Knead the dough a few times on a floured surface.
  6. Roll out the dough into a circle.
  7. Press the dough into a lightly greased 20cm sandwich tin.
  8. Brush the top of the dough with egg and sprinkle some sugar on top.
  9. Bake for 20 minutes until the dough has risen and is golden brown.
  10. Transfer the baked dough to a cooling rack.
  11. While the scone is cooling, place the strawberries in a bowl with a pinch of sugar and the jam.
  12. Set the strawberry mixture aside.
  13. In a separate bowl, beat the clotted cream with 50 g sugar and a drop of vanilla extract until stiff.
  14. To assemble the cake, place the scone base on a serving plate.
  15. Spread the cream over the scone so that a small edge of the cake remains visible.
  16. Pile the delicious strawberries on top of the cream.
  17. Serve the cake cut into pieces.
