Ingredients
- 375 g block puff pastry made from pure butter
- 4 tbsp powdered sugar
- 450g ripe strawberries, or normal and wild
- 1 vanilla bean or 1 teaspoon vanilla extract
- 284 ml pot of double cream
- 140g golden powdered sugar

Preparation steps
- Preheat the oven to 220°C/fan 200°C/gas 7.
- Roll out the dough into a square measuring approximately 30 x 30 cm.
- Place on a large baking tray, place another tray on top and bake until golden brown, about 20 minutes.
- Heat the grill to the highest setting, dust the dough generously with powdered sugar and carefully caramelize it under the grill.
- Dust with another layer of powdered sugar and place on the grill to caramelize again.
- While the cookies are still warm, cut them into 12 neat rectangles, trimming the edges as you go.
- These can now be stored in an airtight container for a day.
- Halve or quarter the strawberries depending on their size, then dust them with a little powdered sugar and set aside.
- Cut open the vanilla pod and scrape the pulp into the cream, then lightly beat with the powdered sugar until the vanilla just holds its shape.
- To assemble, place a dollop of cream on each plate and stack the cookies, cream, and strawberries on top at jaunty angles.
