Ingredients

  • 175g butter, softened
  • 250g golden powdered sugar
  • 3 large eggs
  • 200g plain flour
  • 1½ tsp vanilla extract
  • 2 tsp almond extract
  • 75g ground almonds
  • 170g sour cream
  • 1½ tsp baking powder
  • 50 g peeled pistachios, roughly chopped
  • 140g sultanas
  • 50 g roasted almond flakes
  • 50g glazed red cherries, sliced, plus about 9 remaining whole cherries for decoration
  • 50g mixed peel
  • 250g marzipan
  • 350 g fondant powdered sugar, sifted
  • approx. 100 g green Regal Ice Ready to Roll icing (or white mixed with green food coloring)
  • edible green glitter or sprinkles

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Grease and lightly flour a 1.4 liter bundt pan.
  3. Cream the butter and sugar together until you have a very light and fluffy mixture.
  4. Add the eggs with a handful of flour and stir in, followed by the vanilla and almond extract.
  5. Add half of the remaining flour, half of the ground almonds, half of the sour cream and all of the baking powder and stir in.
  6. Mix the remaining flour with the pistachios, sultanas, remaining ground almonds, flaked almonds, cherries and mixed zest.
  7. Stir the mixture into the cake mixture with the remaining sour cream.
  8. Pour the mixture into the mold and distribute evenly.
  9. Bake for 50 minutes until a skewer inserted comes out clean.
  10. Remove from the oven and let cool in the tin for 10 minutes.
  11. Turn out onto a wire rack to cool completely.
  12. To decorate, first roll the marzipan into a sausage shape so that it lies in a ring shape on the cake.
  13. Place the marzipan on top and press the two ends together.
  14. Press it down a little to make it secure.
  15. Mix the fondant powdered sugar with enough water to create a thick but spreadable icing.
  16. Add the water little by little so that the glaze doesn’t become really runny.
  17. Pour the icing over the marzipan ring and let it drip down a little around the edges.
  18. Shape the Regal Ice icing into holly leaves and dust with green glitter or press green sprinkles on top.
  19. Arrange the holly leaves on the cake and use the whole glazed cherries as berries.
