Ingredients
- 150g sultanas
- 300g flour, plus some flour for dusting
- 7 g bag of fast-acting dry yeast
- 1 tbsp powdered sugar
- ¼ tsp ground cardamom
- ¼ tsp ground nutmeg
- ¼ tsp ground cinnamon
- 150 ml whole milk
- 2 tsp vanilla extract
- 1 medium egg
- 1 lemon, grated zest
- 100g glazed cherries, roughly chopped
- tasteless oil for seasoning
- 250g marzipan
- 100g powdered sugar, plus a little sugar for dusting
- 75g unsalted butter
Preparation steps
- Place the sultanas in a heatproof bowl and pour 100 ml of hot water from the kettle over them.
- Allow to soak for at least 2 hours or overnight.
- Place flour, yeast, powdered sugar, spices and 1 teaspoon salt in a large bowl.
- Heat the milk in a saucepan over low heat or in the microwave until just warm, but do not boil.
- Whisk the vanilla and egg with the warm milk and pour into the dry ingredients.
- Knead everything with your hands to form a soft dough, then transfer to a work surface and knead for 8-10 minutes until soft and elastic.
- Drain the sultanas well and knead them into the dough along with the lemon peel and cherries until the fruits are evenly distributed.
- Clean the bowl and lightly oil it. Then put the dough back in the bowl, cover it with a clean tea towel and let it rise in a warm place for 2 hours until it has roughly doubled in size.
- You can also let the dough rise in the fridge overnight to enhance the flavor.
- Line a 20 x 20 cm cake tin with baking paper.
- If the dough is chilled, let it stand at room temperature for 1 hour before shaping.
- Cut in half on a floured work surface and roll or stretch each piece into a square that will fit the pan.
- Line the base with a piece, then roll out the marzipan on a surface dusted with powdered sugar to the same size as the dough and place it on top.
- Place the second square of dough on top and press the edges together to seal the marzipan.
- Cover loosely and let rise again for 30 minutes to 1 hour, or until the dough has risen slightly.
- Preheat the oven to 180°C/160°C fan/gas 4.
- Bake for 30 minutes until golden brown.
- Allow to cool in the tin for 5-10 minutes, then remove to a wire rack and allow to cool completely.
- Once cooled, cut into 25-36 mini squares (use a ruler if you want to be precise).
- Melt the butter in a small pan over low heat and use it to brush the surface of the stollen bites.
- Dust generously with powdered sugar.
- Let rest for 30 minutes, then serve.
- Store in an airtight container for up to three days.
