  • 150g sultanas
  • 300g flour, plus some flour for dusting
  • 7 g bag of fast-acting dry yeast
  • 1 tbsp powdered sugar
  • ¼ tsp ground cardamom
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cinnamon
  • 150 ml whole milk
  • 2 tsp vanilla extract
  • 1 medium egg
  • 1 lemon, grated zest
  • 100g glazed cherries, roughly chopped
  • tasteless oil for seasoning
  • 250g marzipan
  • 100g powdered sugar, plus a little sugar for dusting
  • 75g unsalted butter

Preparation steps

  1. Place the sultanas in a heatproof bowl and pour 100 ml of hot water from the kettle over them.
  2. Allow to soak for at least 2 hours or overnight.
  3. Place flour, yeast, powdered sugar, spices and 1 teaspoon salt in a large bowl.
  4. Heat the milk in a saucepan over low heat or in the microwave until just warm, but do not boil.
  5. Whisk the vanilla and egg with the warm milk and pour into the dry ingredients.
  6. Knead everything with your hands to form a soft dough, then transfer to a work surface and knead for 8-10 minutes until soft and elastic.
  7. Drain the sultanas well and knead them into the dough along with the lemon peel and cherries until the fruits are evenly distributed.
  8. Clean the bowl and lightly oil it. Then put the dough back in the bowl, cover it with a clean tea towel and let it rise in a warm place for 2 hours until it has roughly doubled in size.
  9. You can also let the dough rise in the fridge overnight to enhance the flavor.
  10. Line a 20 x 20 cm cake tin with baking paper.
  11. If the dough is chilled, let it stand at room temperature for 1 hour before shaping.
  12. Cut in half on a floured work surface and roll or stretch each piece into a square that will fit the pan.
  13. Line the base with a piece, then roll out the marzipan on a surface dusted with powdered sugar to the same size as the dough and place it on top.
  14. Place the second square of dough on top and press the edges together to seal the marzipan.
  15. Cover loosely and let rise again for 30 minutes to 1 hour, or until the dough has risen slightly.
  16. Preheat the oven to 180°C/160°C fan/gas 4.
  17. Bake for 30 minutes until golden brown.
  18. Allow to cool in the tin for 5-10 minutes, then remove to a wire rack and allow to cool completely.
  19. Once cooled, cut into 25-36 mini squares (use a ruler if you want to be precise).
  20. Melt the butter in a small pan over low heat and use it to brush the surface of the stollen bites.
  21. Dust generously with powdered sugar.
  22. Let rest for 30 minutes, then serve.
  23. Store in an airtight container for up to three days.

Health Benefits of Stollen Bites

Stollen bites are not only a delicious treat, but also have numerous health benefits. The combination of ingredients used in this recipe provides various nutrients that contribute to overall well-being. Here are some of the top health benefits of stollen bites:

1. Sultanas

Sultanas, dried white seedless grapes, are a rich source of fiber. They can support digestion and promote intestinal activity. They also contain natural sugar, which provides a quick energy boost.

2. Plain flour

Flour used for stollen bites is a key ingredient that provides important carbohydrates and small amounts of protein. Carbohydrates are the body’s main source of energy.

3. Fast-acting dry yeast

Using fast-acting dry yeast in this recipe helps the dough rise and create a fluffy consistency. Yeast also contains B vitamins, which are important for metabolism and maintaining healthy skin, hair and nails.

4. Cardamom, nutmeg and cinnamon

These warm spices not only add delicious flavor but also offer potential health benefits. Cardamom has antioxidant properties and can improve digestion. Nutmeg is rich in anti-inflammatory compounds and cinnamon can help regulate blood sugar levels.

5. Whole milk and egg

Whole milk and egg contribute to the richness and moisture of the stollen bites. They are also excellent sources of protein, calcium and important vitamins such as vitamin D and vitamin B12. Calcium supports bone health, while protein is essential for muscle growth and repair.

6. Lemon and ice cream cherries

Lemon zest provides a refreshing citrus flavor and cherries add a touch of sweetness. Lemons are a great source of vitamin C, which boosts the immune system and promotes collagen production. Cherries are rich in antioxidants that may have anti-inflammatory properties.

7. Marzipan

Marzipan is made from ground almonds and sugar. Almonds are nutrient-dense and contain healthy fats, fiber, protein, vitamin E and magnesium. These nutrients contribute to heart health, aid digestion, and support brain function.

8. Powdered sugar and unsalted butter

While powdered sugar and unsalted butter add sweetness and richness to the stollen bites, they should be eaten in moderation due to their high calorie and fat content. However, they add to the overall flavor and texture of the treat.

Remember to enjoy stollen bites in moderation as part of a balanced diet. These delicious treats can be a perfect addition to your festive celebrations while providing some essential nutrients.
