  • 85g butter, melted
  • 140g self-raising flour
  • 100g golden powdered sugar
  • 1 tbsp baking powder
  • 200 ml milk
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 2 Bramley apples (or other cooking apples), peeled, cored and sliced
  • 140g dark brown sugar
  • 50 g pecans, coarsely chopped

Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas 4.
  2. Lightly grease a 2-quart baking dish with butter.
  3. Place the flour, sugar and baking powder in a large bowl along with a pinch of salt.
  4. Mix the milk, butter, egg and vanilla extract and stir into the dry ingredients until a smooth dough forms.
  5. Arrange the apples in the bowl.
  6. Pour the batter onto the apples and smooth it out with a knife until the apples are covered.
  7. For the topping, pour 250 ml boiling water over the sugar and stir until smooth.
  8. Pour the liquid over the pudding mixture.
  9. Sprinkle over the pecans.
  10. Bake for about 40 minutes, until the pudding has risen and is golden brown.
  11. When serving the pudding, use a large spoon, making sure some of the sticky caramel sauce coats the bottom of the dish.
  12. Serve with cream, warm vanilla sauce or vanilla ice cream.
