Sticky teriyaki salmon rice

  • 1 tbsp teriyaki sauce
  • 1 tbsp sweet chili sauce
  • 1 salmon fillet, with skin

  • 1 head pak choy, halved

  • 2 spring onions, finely chopped
  • small bunch of coriander, roughly chopped
  • Squeeze of lime

  7. Grill the salmon for 4-5 minutes and baste with the marinade.
  8. Turn the salmon over and grill for another 3 minutes.
  9. Sprinkle the salmon with sesame seeds and cook for another minute, until the seeds are toasted and the salmon is cooked through.
  10. Stir spring onions and coriander into the rice.
  11. Serve the rice garnished with the salmon fillet.
  12. Spread any excess marinade on the baking sheet and add a squeeze of lime.
  13. Serve the steamed pak choy alongside.
