Ingredients

  • 3 servings of pork spareribs or approximately 1½kg/3lb 5oz individual pork spareribs
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 1 garlic clove, crushed
  • 2 tbsp smoked paprika powder
  • 1 teaspoon mild chili powder
  • 300 ml tomato passata
  • 2 tbsp tomato paste
  • 150 ml apple cider, white or red wine vinegar
  • 125g dark muscovado sugar
  • 1½ kg new potatoes, with skin on
  • 2 tbsp olive oil
  • 1-2 rosemary sprigs, finely chopped, or a pinch of dried herb mixture
  • 2 tbsp white or red wine vinegar

Preparation steps

  1. Preheat the oven to 150°C/130°C fan/gas 2.
  2. Place the ribs in a single layer in a roasting pan and barely cover with water.
  3. Cover with foil and cook for 1½ hours.
  4. Drain well.
  5. If not using these immediately, cover and refrigerate until ready to cook.
  6. Meanwhile, fry the onion in the oil in a pan until soft.
  7. Add garlic, smoked paprika and chili powder and fry for 1 minute.
  8. Add passata, puree, vinegar and sugar and bring to a boil.
  9. Let cook for 10 minutes.
  10. If you are not using this sauce immediately, refrigerate and refrigerate.
  11. Preheat oven to 220°C/200°C fan/gas 7.
  12. Brush the ribs all over with the sauce and place on a baking sheet.
  13. Mix the potatoes with oil, rosemary and spices in a large roasting pan.
  14. Roast for 40 minutes on the middle rack and the ribs on the rack above.
  15. Turn the ribs and potatoes halfway through until both are nicely browned all over.
  16. Place the potatoes in a large bowl, sprinkle with vinegar and serve hot, warm or cold.
  17. To serve, slice the ribs and transfer the excess sauce to bowls for dipping.
