Sticky cod with celery and parsley puree

  • 2 tbsp extra virgin olive oil
  • 4 x 120g/4½oz pieces of cod
  • some flour for dusting
  • 2 cloves of garlic, minced
  • 1 teaspoon crushed chili flakes
  • 3 tbsp sherry vinegar
  • 1 tbsp soft brown sugar
  • Lemon wedges for serving
  • 1 large celeriac, peeled and diced (approx. 500 g)
  • 2 tbsp butter
  • large handful of parsley, finely chopped

Preparation steps

  1. To make the porridge, cook the celery in salted water for 10 minutes until soft.
  2. Drain, return to the pan and allow to steam dry for a few minutes.
  3. Mash with the butter and spices and then stir in most of the parsley.
  4. Keep the fish warm while you prepare it.
  5. Heat half of the oil in a frying pan.
  6. Dust the fish with flour, season on both sides and fry for about 4 minutes on each side.
  7. Transfer to a plate.
  8. Add the remaining oil to the pan and fry the garlic and chilli for 2 minutes until golden brown.
  9. Add vinegar, sugar and a little salt and let it bubble for 1-2 minutes.
  10. Return the fish to the pan to heat.
  11. Serve the fish on the puree and pour the pan sauce over it.
  12. Sprinkle with the remaining parsley and serve with lemon.
