- 300-400g baby carrots
- 2 onions, cut into thick round slices
- 1 tbsp sunflower oil
- 50g roasted cashew nuts
- small packet of coriander leaves for serving

- 4 tbsp hot chili sauce
- Zest of 1 lime, plus 4 tablespoons juice (approx. 2 limes)
- Zest of half an orange plus 2 tablespoons juice
- 1 tbsp rice vinegar
- 1 tbsp tomato paste
- 2 scoops ginger, finely chopped, plus 1 tablespoon syrup
- Preheat oven to 200°C/180°C fan/gas 6.
- Place the chicken thighs, carrots, onions and oil in a large, shallow roasting pan and season a little.
- Roast for 30 minutes.
- In the meantime, mix the ingredients for the glaze.
- Drizzle over the chicken and vegetables and roast for another 15 minutes.
- Sprinkle over the cashews, mix well and roast for another 15 minutes until the chicken is browned, tender and sticky.
- Sprinkle some coriander on top.
