  • 8 chicken legs
  • 300-400g baby carrots
  • 2 onions, cut into thick round slices
  • 1 tbsp sunflower oil
  • 50g roasted cashew nuts
  • small packet of coriander leaves for serving
  • cooked jasmine rice for serving
  • 100g clear honey
  • 4 tbsp hot chili sauce
  • Zest of 1 lime, plus 4 tablespoons juice (approx. 2 limes)
  • Zest of half an orange plus 2 tablespoons juice
  • 1 tbsp rice vinegar
  • 1 tbsp tomato paste
  • 2 scoops ginger, finely chopped, plus 1 tablespoon syrup

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Place the chicken thighs, carrots, onions and oil in a large, shallow roasting pan and season a little.
  3. Roast for 30 minutes.
  4. In the meantime, mix the ingredients for the glaze.
  5. Drizzle over the chicken and vegetables and roast for another 15 minutes.
  6. Sprinkle over the cashews, mix well and roast for another 15 minutes until the chicken is browned, tender and sticky.
  7. Sprinkle some coriander on top.
  8. Serve with the cooked rice.
