  9. Add the bacon and fry with the potatoes until it begins to brown.
  10. Place the birds on the potatoes and pour the wine over them.
  11. Put in the oven uncovered for 15 minutes.
  12. Remove the birds from the mold and let them rest in a warm place for 10 minutes.
  13. Baste the potatoes and put them back in the oven until cooked through.
  14. Sprinkle the parsley on top.
  15. Put the birds back in the pan and bring them to the table or serve them on a plate with the potatoes.
  16. Serve with Cavolo Nero or sprout tips.
