  • 3 eggs
  • 175g/6oz self-raising flour
  • 1 tablespoon milk
  • 1 tsp vanilla extract

Preparation steps

  1. Generously grease a 1.2 liter pudding tin and add the topping of your choice to the base.
  2. Bring a kettle of water to the boil.
  3. To prepare your steamer, place a snug, upside-down bowl in the bottom of a large, deep pot large enough to hold the pudding.
  4. Place the sponge cake ingredients in a food processor and pulse until smooth (but do not overwork the mixture), then add to the pudding bowl.
  5. Cover with a lid made of baking paper and foil and tie with string.
  6. Place the pudding on the upturned bowl in your pot.
  7. Pour in enough hot water to come halfway up the side of the pudding bowl.
  8. Place on medium heat and bring to a boil.
  9. Cover the pan with a tight-fitting lid, reduce the heat to a gentle simmer and allow to steam for 2½ hours. Add boiling water if the level gets too low.
  10. Check if the pudding is done by inserting a skewer through the foil and parchment cover into the center of the pudding.
  11. If there is still some wet mixture on the skewer, return the pudding to the steamer for another 15-20 minutes and then check again.
  12. Once the pudding is cooked, cover it and turn it out onto a plate.
  13. Serve immediately with vanilla sauce if desired.
