  • 4 x 175-200g sirloin steaks
  • 2 chopped shallots
  • 25g butter
  • 300 ml red wine
  • 2-3 sprigs of fresh thyme
  • 2 tbsp currant jelly
  • 2 tsp grainy mustard

Preparation steps

  1. Season the steaks with black pepper.
  2. Heat a large non-stick frying pan until really hot.
  3. Cook the steaks for 2-3 minutes without moving them.
  4. Sprinkle the steaks with salt.
  5. Flip the steaks over and let them cook for another 2-3 minutes.
  6. Keep the steaks warm.
  7. Reduce the heat of the skillet.
  8. Sauté the chopped shallots in the butter until softened, about 2 minutes.
  9. Pour in the red wine.
  10. Add the thyme to the pan.
  11. Reduce the red wine by two thirds.
  12. Stir in currant jelly, mustard, salt and pepper.
  13. Place the steaks back in the pan.
  14. Heat the steaks in the sauce.
  15. Serve the steaks in red wine sauce.
