Nick Jones and Leah de Felice Renton from Birds & Bats Wines have created a true masterpiece with their creation called “St Nick’s Flip”. This delicious cocktail can only be described as a heavenly Christmas dessert, served by the glass. Its creamy texture and festive flavors make it an absolute must for the holiday season. Ingredients

  • 200 ml cognac
  • 150 ml muscat wine (we used Rutherglen)
  • 60ml simple syrup (we used Funkin sugarcane syrup)
  • 6 egg whites
  • 120 ml double cream
  • Ice
  • 6 strips of peeled orange peel
  • 6 cloves
  • 6 pinches ground cinnamon

Preparation steps

  1. Add a third of all ingredients (except the peeled orange, cloves and cinnamon) to a cocktail shaker with a handful of ice.
  2. Shake vigorously for 1 minute, then strain into two wine glasses.
  3. Repeat the process two more times with the remaining ingredients, using fresh ice each time.
  4. Place a clove on each piece of peeled orange.
  5. Use the clove-studded orange pieces to garnish each glass.
  6. As a final garnish, add a pinch of cinnamon.
