  • 2 smoked haddock fillets (about 200 g each)
  • 1 leek, cleaned and sliced
  • small piece of butter
  • 300g risotto rice
  • 3 tbsp mascarpone
  • A handful of chives, chopped for serving, optional

Preparation steps

  1. Place the fish in a large bowl, cover with 1.2 liters of boiling water and let sit for 8-10 minutes until slightly frayed. Remove with a slotted spoon, peel off the skin and cut into large pieces. Keep the liquid warm.
  2. Cook the leeks in butter in a large skillet until tender.
  3. Stir in the rice and pour over the fish poaching liquid.
  4. Stir well and then let it bubble for 15-20 minutes until the rice is almost cooked.
  5. Gently stir in the fish flakes without crushing them.
  6. Cook the rice for another 2 minutes, stirring occasionally, until cooked through and most of the liquid has evaporated.
  7. Stir in mascarpone.
  8. Sprinkle with chives if using.
