Ingredients

  • 250g couscous
  • 300 g frozen broad beans
  • 125g baby spinach leaves
  • 20g pack of fresh mint
  • 85g black olives
  • 200g pack of feta cheese

Preparation steps

  1. Prepare couscous with boiling water according to package instructions.
  2. In the meantime, cook broad beans according to package instructions. Allow to cool in a colander under a cold tap and then drain.
  3. Place baby spinach leaves in a colander and pour boiling water over them to wilt. Rinse under cold water and squeeze out.
  4. Stir broad beans, spinach, mint and black olives into the couscous.
  5. Crumble in the feta.
  6. Drizzle with plenty of olive oil and season.
  7. Mix well.
