Ingredients

  • 350g raw, peeled tiger prawns, thawed
  • 1 clove of garlic
  • 1 red chili
  • 5 tbsp olive oil
  • 2 vine tomatoes
  • 1 tbsp lemon juice
  • 1 tsp clear honey
  • 1 tbsp chopped coriander
  • 2 Little Gem salads
  • 1 ripe avocado, peeled and pitted
  • a handful of rocket leaves
  • To serve, Italian flatbread or toasted flatbread

  11. Place the chopped tomatoes in a bowl.

  15. Cover the dressing and chill for up to 8 hours.
  16. Tear the gem leaves into small pieces.
  17. Chop the avocado flesh.
  18. Fill six jars with lettuce, avocado and arugula leaves.
  19. Pile the shrimp on top of the salad in each jar.
  20. Pour the chilled dressing on top.
  21. Serve with Italian flatbread or toasted pittas.
