- 250g quinoa
- 1 cube of vegetable broth
- 2 roasted red peppers, deseeded and chopped (from a jar will do too)
- 3 tbsp olive oil
- 3 spring onions, sliced
- Zest and juice of 1 lime
- Handful of coriander, chopped
- Cook the quinoa according to the package instructions and add the vegetable stock cube to the cooking water.
