Ingredients

  • 250g quinoa
  • 1 cube of vegetable broth
  • 2 roasted red peppers, deseeded and chopped (from a jar will do too)
  • 3 tbsp olive oil
  • 3 spring onions, sliced
  • Zest and juice of 1 lime
  • Handful of coriander, chopped
