  • 2 tbsp curry paste
  • 1 onion, chopped
  • 2 carrots, grated
  • 140g red lentils
  • 1l hot vegetable broth
  • 500g pack of bread mix
  • 1 tbsp curry paste

  6. Cut the rolled out bread mixture into 8 slices.

  8. Bake for 20-25 minutes or until golden brown and cooked through.
  9. Meanwhile, fry the curry paste and onions in a large pan.
  10. Cook until fragrant, 2 minutes.
  11. Stir in the carrots and lentils and cover with the curry paste.
  12. Cook for another 2 minutes.
  13. Pour in the broth and simmer for 20 minutes until the lentils are soft.
  14. Blend the soup with a hand blender until smooth.
  15. Add some spice if desired.
  16. Serve the soup with the curry pinwheels.
