- 8 lamb chops
- 2 tbsp olive oil
- Juice and zest 1 lemon
- 1-2 red chili peppers, deseeded and finely chopped

- small pack of mint, leaves picked and finely chopped
- For serving, mixed green leaves such as arugula and watercress
