Ingredients
- 2 medium onions
- 2 tablespoons vegetable oil, plus some oil for frying the eggs
- 400 g basmati rice, rinsed well
- 12 cocktail sausages or 6 twisted chipolatas, then halved
- 6 slices dry-cured streaky bacon, cut into bite-sized pieces
- 140 g chestnut mushrooms, halved
- 2 red or green chili peppers, deseeded
- 3 cloves garlic, flattened to remove skin
- 6 eggs
- 20g pack of coriander
- Soy sauce and chili sauce for serving
Preparation steps
- Preheat the oven to 180°C/160°C fan/gas 4.
- Cut half an onion into thin slices and spread on a baking tray with 1 teaspoon of oil.
- Roast the sliced onions in the oven for 15 minutes, turning once, until golden brown and crispy.
- Place the rice and enough water to cover it with a fingertip in a large pot.
- Bring the rice to a boil, stir once, then cover and simmer for 10 minutes.
- Remove the rice from the heat, cover and let it stand for 10 minutes, then fluff it with a fork.
- Add 1 teaspoon of oil to a frying pan and fry the sausages for a few minutes.
- Add the bacon to the pan and cook for another 5-7 minutes, until the bacon is golden brown and the sausages are cooked through.
- Place the bacon and sausages in a large bowl.
- In the same skillet, fry the mushrooms until golden brown, 3 minutes, then add them to the bowl with the bacon and sausage. Wipe out the pan.
- Place the chiles, garlic, remaining onions and 1 tablespoon oil in a small food processor and blend to form a paste.
- Gently fry the paste, stirring, until fragrant, about 3 minutes.
- Add the rice to the pan, stir well, then fold in the meat and mushrooms.
- Add a splash of water and stir everything together.
- Pour the mixture into the tin, cover and keep warm in the oven.
- Heat a thin layer of oil in the wiped frying pan over low heat.
- Crack in as many eggs as the pan can hold and fry them gently, occasionally spooning a little hot oil over them, until cooked to your liking.
- Take the mold out of the oven.
- Roughly chop the coriander and mix it with the rice along with a dash of soy sauce.
- Divide the rice between plates and place an egg on each.
- Depending on your taste, sprinkle more soy sauce and chili sauce on top.
- Distribute the crispy onions on the plates.
